Macaroni Recipe Indian Style

Cook with Budgett loves to again share with you simply best yet tasty recipes. Macaroni recipe Indian style with step-by-step instructions like before. Macaroni comprises to be a variety of pasta and is used to make various pasta recipes. In fact macaroni, Indian style recipe is great in taste. This macaroni recipe is a tasty pasta made in Indian style with tomatoes and Indian spices.

Whenever I make any Pasta recipe, I always try to add some vegetables to it and you all know that Cook with Budgett used to provide healthy as well as tasty recipes. The addition of veggies makes the pasta more wholesome, nutritious and adds crunch to it. Though this macaroni pasta recipe can be made without any veggies also. I have cooked the vegetables in a pan, but they can be steamed or roasted and then added to the macaroni pasta.


Generally, I do not use any cheese or cream when I make this macaroni recipe in Indian style. You can add them if you want.


Ingredients

For Cooking Macaroni

▢1-2 heaped cup macaroni or elbow macaroni or 130 grams macaroni

▢Half teaspoon salt

▢3-4 cups water


Other Ingredients

▢2-3 tablespoons oil (can use sunflower oil or olive oil).

▢Half teaspoon minced garlic or finely chopped garlic or 3 to 4 small garlic cloves, minced or finely chopped.

▢⅓ cup finely chopped onions or 1 medium onion, finely chopped.

▢1-2 cups tightly packed finely chopped tomatoes or 3 medium tomatoes or 180 grams tomatoes.

▢1.35 to 1.5 cups chopped mixed vegetables like carrots, green beans, cauliflower, capsicum, baby corn, potatoes, etc.

▢Quarter cup green peas – fresh or frozen.

▢Quarter teaspoon black pepper powder.

▢Quarter teaspoon turmeric powder.

▢Quarter teaspoon Garam Masala Powder.

▢Half teaspoon Kashmiri red chili powder.

▢Half teaspoon coriander powder.

▢½ teaspoon cumin powder.

▢salt as per taste.

▢1-2 cup water.

▢1-2 teaspoon mixed dry herbs – basil, thyme, oregano, parsley, etc

▢1-2 tablespoon chopped coriander leaves for garnish

Instructions

Cooking Macaroni

  • In a pan, heat 3-4 cups water and half teaspoon salt. Bring it to a boiling point.
  • Add 1-2 heaped cups of macaroni (130 grams macaroni). stir it with the help of a fork.
  • Begin to cook macaroni on medium-high flame till they are al dente – meaning they should consist a slight bite to them.
  • Drain all the water and keep cooked macaroni aside.


Cooking Vegetables

  • Heat 2-3 tablespoons oil in a pan. Lower down the flame. Add half teaspoon minced garlic. You can also add half a teaspoon of ginger-garlic paste instead of minced or finely chopped garlic.
  • Sauté till the garlic is light brown or till its raw aroma goes away.
  • Next, add ⅓ cup finely chopped onions. 
  • Mix and sauté the onions on a medium-low flame stirring continuously till they become translucent completely.
  • Next, add 1-2 cups tightly packed finely chopped tomatoes. mix it well.
  • Cover the pan with the lid. In between do check while cooking tomatoes.
  • Cook tomatoes on a low to medium flame till it gets soften and become fully pulpy. 
  • Lower down the flame and then add all the spice powders step by step. 
  • Mix and sauté the spice powders for a few seconds until you get a nice aromatic fragrance from the spice powders.
  • Then add 1.30 to 1.5 cups of mixed vegetables. Also, add a quarter cup of green peas.
  • Season with salt according to the taste and mix it very well.
  • Pour 1-2 cups of water and mix it again. Cover the pan with help of a lid.
  • On a medium-low to medium flame simmer till the vegetables are cooked. In between do check and if the water has become less you can add some more water.
