Homemade Eggless Christmas Fruit Cake Recipe

 It’s a classic Christmas day recipe that makes a light, crumbly, and perfectly moist homemade Christmas fruit cake recipe that you’ll love to enjoy and share all season. No eggs are needed in making this whole recipe.

Traditional Christmas fruit cake is considered to be a yummy treat made by soaking dried fruits and nuts in rum or with the help of wine and mixing it with fragrant spices in a simple from-scratch batter.

To make our eggless version I use a blend of whole wheat flour (atta) and maida. This would help to create a wonderfully tender and puffy cake each and every time!

Although most of the alcohol will bake out of the cake, the recipe made by Cook with Budgett would be healthy and this is an alcohol-free recipe if you choose. Substitute rum with some orange juice or apple juice.

I soak up the dry fruits and nuts in rum for around 3-4 days at room temperature before using it to bake. 

Place the dried fruit and soak in apple juice or orange juice, then keep in the fridge for around 2 to 3 days.

For Soaking

▢Quarter cup golden raisins

▢Quarter cup black raisins (seedless)

▢Quarter cup cashews

▢Quarter cup chopped candied orange peels or candied citrus peels

▢8-9 dried apricots

▢9 dates – small to medium-sized

▢¼ cup tutti frutti – optional

▢2-3 tablespoons dried cherries or glazed cherries

▢1 cup fresh orange juice or apple juice

For Cake Batter

▢1.5 cups all-purpose flour – 185 grams

▢1 cup whole wheat flour – 125 grams

▢1.5 cups demerara sugar – 260 grams – can also add instead 255 grams brown sugar or 255 grams white sugar or 260 grams powdered sugar/confectioner's sugar

▢1-2 cup oil or melted butter, use any neutral-flavored oil

▢1-2 cup soy milk or any nut milk or dairy milk

▢2 -3tablespoons apple cider vinegar or regular white vinegar

▢1-2 teaspoon baking soda

▢Half teaspoon baking powder

▢1-2 teaspoon vanilla extract or ½ teaspoon vanilla essence

For Ground Spice Mix

▢2-3 pinches cinnamon

▢2-3 green cardamoms

▢2-3 allspice

▢⅛ teaspoon grated nutmeg or nutmeg powder, about 2 to 3 pinches of nutmeg powder

▢2-3 cloves – optional

▢Half teaspoon ground ginger (ginger powder) – optional

Instructions to make homemade eggless Christmas fruit cake 

Soaking Nuts And Dry Fruits

  • Firstly chop down all the nuts and dry fruits and then take them into a bowl. Then pour the apple juice or orange juice into the bowl or jar.
  • As we will be using apple juice or orange juice to soak the dry fruits, then cover the bowl with an air-tight lid or tighten it up with a clingfilm wrap and keep it in the refrigerator.
  • After a few hours or every day stir or shake the bowl or the jar, so that all the nuts and dry fruits get completely soaked properly.

Other Preparations

  • In a spice grinder, grind down the spices listed above, under the specific heading "for ground spice mix" just kept aside the ginger powder. Set it aside.
  • Prepare a loaf pan or it can be a round cake pan by greasing it completely and sufficiently well with the help of oil. You can also line the cake pan with butter paper.
  • Preheat the oven to 180-185 degrees Celsius (360 degrees Fahrenheit)for about 20-30 minutes.

Making Cake Batter

  • Sieve the flours, baking powder, and ground powdered spice mix. You can also add some ginger powder at this step particularly. Note that ginger powder is completely optional and of choice.
  • Add the soaked dry fruits together with the leftover apple juice/orange juice. 
  • Now add the oil and demerara sugar or regular white sugar. Also, add some of the vanilla extracts. Gently mix all together with the ingredients until just combined, making sure to not over-mix.
  • In a bowl or mug add soy milk. With it add some apple cider vinegar and stir it gently.
  • Add baking soda and stir it thoroughly. Now add this amazing frothing mixture over to the cake batter.
  • Stir and mix it quickly but evenly as well. 


  • Pour into the cake pan.
  • Shake the pan lightly and firmly so that the cake batter gets spread evenly throughout the whole pan.
  • Use a spatula to even up the top of the cake.
  • Bake the cake in the preheated oven for 185 degrees Celsius (356 degrees Fahrenheit) for approximately about 60 minutes or more or less depending on the type of oven you are using. 
  • The eggless Christmas fruit cake will cover up with a lovely golden brown color. Test the doneness by inserting a toothpick into the center and to make sure that the cake got fully prepared it should come out clean.
  • Let the cake pan gets completely cool down on a wired rack or stand before flipping the cake out onto a plate.


  • Wrap up the Christmas fruit cake in a cling film or store it in an air-tight container at room temperature for 4 to 5 days.
  • The flavors mature over a period of time and thus the eggless fruit cake tastes very good after some days. If you stay in a warm climate then keep Christmas fruit cake in the fridge.
