Cook with Budgett here comes again with simply best yet tasty recipes and for the record, the love for these Veg cheese sandwiches recipe started very since from the street side sandwich wallahs in Delhi, The fond of these sandwiches to have even in my school & college days, like breakfast. 

Even later when working to give you the best recipes, I would use to have these sandwiches for a quick brunch or lunch.

I have added most of the veggies in these sandwiches, except boiled beetroots that is optional. I have added onions for some spiciness tomatoes for some sourness, and boiled potatoes and capsicum. I have also shared Veg Cheese sandwich recipe ingredients which is just amazing and easy to make
I always prefer to toast the sandwich.

 But you can also grill them as some food lovers prefer that way as well. An electric toaster or an aluminum handheld stovetop toaster works well too to make these veg cheese sandwiches. For making toast and sandwiches, I always prefer to go for healthy options: brown bread or multi-grain bread. For Chutney

▢ ¾ cup coriander leaves

▢ ¾ cup mint leaves

▢ Half inch ginger - chopped

▢ 2 or 3 green chili - chopped

▢ Half teaspoon chaat masala (optional)

▢ black salt or regular salt or rock salt as required

▢ little water to grind the chutney into semi-solid 

▢ few drops of lemon juice

For Veg Cheese Sandwich Recipe Ingredients 

▢ 9 to 11 slices of brown bread or white bread or whole wheat bread.

▢ 2 medium-size tomatoes, thinly sliced.

▢ 2 medium-size onions, thinly sliced.

▢ 1 small cucumber, peeled thinly sliced.

▢ 1 small capsicum (green bell pepper) - thinly sliced.

▢ 1 boiled beetroot, thinly sliced (optional).

▢ 2 boiled potatoes, thinly sliced.

▢ Half to ⅔ cup grated Amul cheddar cheese or regular cheese add cheese as required.

▢ Butter at room temperature to apply on the bread.

▢ Chaat masala or sandwich masala to sprinkle on the veggies.

▢ Black salt to sprinkle on the veggies which increases the taste proportionally.


  • Prepare the chutney first. Blend all the ingredients well as mentioned under the list 'For Chutney' in a grinder. 
  • Add very little water. The chutney has to be thick or slightly of a thick consistency or semi-solid.
  • Keep the chutney aside now.
  • Steam or boil the potatoes and beetroot as per convenience. Peel and slice them thinly.
  • Rinse and peel the onions and cucumber. Slice them thinly into round slices.
  • Rinse and remove the seeds from the capsicum so that the eating experience doesn't get affected. Slice it thinly into lines.
  •  Also, slice the tomatoes thinly not too broad. Keep the sliced veggies aside. Grate the cheese onto it and keep it aside.

Making Veg Cheese Toast Sandwich Recipe 

  • Slice the edges of the bread if you prefer but our recommendation would be to keep it as the crisp of the sides adds the taste like anything. Spread butter evenly on all the slices. Make sure the butter layover the entire bread completely. 
  • Keep in mind that a generous coating of butter does not allow the bread to become soggy, even after when the chutney will be applied 
  • Spread the mint-coriander chutney on all the bread slices.
  • Now Place over the onion, tomato with potato and capsicum slices. A sprinkler is required to add some tangy taste and for that, a pinch of chaat masala or sandwich masala would be perfect on them. Also, sprinkle a pinch of black salt evenly.
  • Now top with grated Amul cheese (Any cheese can be used it's the preferred one).
  • Cover the sandwiches with the remaining bread slices and place them in a preheated toaster or grill.
  • Toast it for 3 to 4 minutes till the bread gets toasted well and golden color starts appearing. Toast the remaining sandwiches in the same way.
  • Spread some butter on top of the hot sandwiches and serve a veg cheese toast sandwich hot with the remaining chutney and tomato sauce.
