Sarson is the Hindi/Punjabi word that is used for Mustard and Saag means Greens basically. Moreover, saag is a Punjabi term that means greens. so the English translation for Sarson ka Saag is mustard greens.

Shortcut methods are not allowed in the making of Sarson ka saag. Sorting the greens from the pool of them, washing them, chopping and then cooking them… Blending them and again cooking them is a time-intensive method but the end result is worth paying off.

For Sarson Ka Saag

▢0.50 bunch mustard leaves (sarson)

▢0.30 bunch bathua leaves (chenopodium)

▢0.30 bunch spinach leaves

▢0.50 cup chopped tender radish leaves (mooli ke patte)

▢1-inch white radish root

▢1 cup fenugreek leaves, chopped

▢1 medium-sized onion, chopped

▢1 medium-sized tomato, chopped

▢1-inch ginger, chopped

▢1 green chili, chopped

▢4 to 5 garlic, chopped

▢0.50 teaspoon red chili powder

▢2 pinch asafoetida or quarter teaspoon asafoetida powder (hing)

▢1 to 2 cups water

▢1 tablespoon maize flour

▢salt as required

Tempering For 3 Servings

▢2 medium-sized onions, finely chopped

▢2 tablespoon oil

▢2 bowls of cooked saag

Instructions

Making Sarson Ka Saag - Simply best yet tasty recipe

  • First, we gonna clean and chop all the greens. then wash the greens well enough.
  • In a pressure cooker or pan add all the ingredients listed under saag except for maize flour.
  • Cover the pressure cooker from the top and cook for around 7-8 minutes or more.
  • If cooking in a pan, then cover it up and let the greens cook till it get completely done. Do check occasionally time-to-time.
  • Pour down the greens along with the stock and maize flour in a blender. blend till it gets smooth.
  • In another pan, pour the pureed greens.
  • Simmer for a good 30 minutes.

Tempering For Sarson Ka Saag

  • In a separate small pan, heat up the oil or ghee
  • Add chopped onions and fry them till it gets light brown.
  • Add the prepared saag. Stir and simmer it for a couple of minutes.
  • Stir it occasionally.
