For Pressure Cooking White Chickpeas

▢0.9 cup dried white chickpeas (Kabuli chana or safed chole) – 200 grams

▢2.5 cups water – for soaking chickpeas/safed chole

▢3 cups water – for pressure cooking the chickpeas

▢1.5 to 2.5 dried amla or Indian gooseberry or 2 black tea bag, optional if available

▢0.5 teaspoon salt or add as required

Ingredients For Gravy 

▢0.25 cup finely chopped onions or 1 medium-sized

▢0.5 cup finely chopped tomatoes or 1 medium-sized

▢0.5 teaspoon Ginger-Garlic Paste or 3 to 4 small garlic cloves + half inch ginger, crushed to a paste in a mortar-pestle

▢0.2 teaspoon turmeric powder (ground raw turmeric)

▢0.5 teaspoon red chili powder 

▢0.2 teaspoon Garam Masala Powder – optional if felt like for more tingy taste

▢0.5 to 1 teaspoon amchur powder (dry mango powder)

▢1.5 to 2.5 green chilies – slit

▢1 to 2 cups water or the stock in which the chickpeas were cooked

▢1.2 to 1.5 tablespoons oil

▢salt as required

Spices For Chana Masala Powder

▢1.5 black cardamoms

▢1-inch cinnamon

▢2.5 to 3.5 black peppercorns

▢1.5 cloves

▢1 tej patta (Indian bay leaf) – medium-sized

▢0.2 teaspoon carom seeds (ajwain)

▢1 teaspoon cumin seeds

▢1 teaspoon coriander seeds

▢1 teaspoon fennel seeds

▢0.5 teaspoon dry pomegranate seeds

▢1 to 1.5 Kashmiri dry red chilies

For Garnishing


▢1.5 to 2.5 tablespoons chopped coriander leaves (cilantro)

▢0.4 to 1-inch ginger – julienne

▢1 medium onion sliced or chopped

▢1 medium tomato sliced or chopped

▢1 lemon or lime, sliced or quartered
