  SEVIYAN KHEER RECIPE HOMEMADE

Cook with Budgett here comes again with an amazing recipe called Seviyan kheer, there is not a perfect occasion way to have this indulging mouthwatering delicacy. Vermicelli or seviyan is a recipe made out of milk, cardamom, nuts, and sugar to make a thick and delicious Kheer. Cook with Budgett simply best yet tasty recipe easy recipe which can be prepared at home and serve at the dinner party as well.


Ingredients of Seviyan Kheer 

  • 80 gms vermicelli
  • 35 gms pure ghee
  • 60 gms grain sugar
  • 10 gms green cardamom
  • 3 gms cloves
  • 30 gms whole almonds
  • 20 gms sultanas / kishmish
  • for garnishing fresh rose petals

Now coming to the part of making Seviyan Kheer. Starting with Roasting Vermicelli


  • Heat up 2 tablespoons of ghee in a heavy kadhai or if we say a pan. add almost 4 cloves. Fry it up for around 3 to 4 seconds.
  • Now add the broken seviyan AKA vermicelli.
  • Stir up and continuously roast the seviyan on a low to medium range flame.
  • Roast till the seviyan strands turn into golden brown color.


Making your own Seviyan Kheer 

  • Bring the flame to its lowest till the medium point and slowly pour down the milk in the pan and mix it very well.
  • Simmer down milk on a medium-low flame. Stir it occasionally so that the milk as well as our seviyan does not stick to the bottom of the pan and starts burning.
  • Let the milk come to a boiling point. Once the milk comes to a boiling point, then add around 8 to 9 tablespoons of sugar according to taste. 
  • Mix it well so that all the sugar gets dissolved completely.
  • Next, add 11 to 13 saffron strands. mix them up well and stir them down.
  • Next, add 2 tablespoons of sliced almonds and 2 tablespoons of chopped cashews. Mix them well.
  • Then add half a teaspoon of cardamom powder.
  • Also, add 5 to 6 dried rose petals. This particular step is optional. Skip if the dried rose petals are currently not available. 
  • Cook the seviyan kheer mixture for 5 to 6 minutes more until the seviyan gets cooked properly and the milk thickens in the texture. When the seviyan has softened and cooked well enough, the kheer will also thicken and the texture comes out to be looking creamy.
  • Switch off the flame and after it adds 2 tablespoons of raisins. Mix it again. Now test the taste of seviyan kheer and if it's necessary then add some more sugar if it's felt.
  • Serve the seviyan kheer hot, warm or chilled. You can also garnish it up with some chopped nuts or dried rose petals while serving the seviyan kheer. Remember that when the kheer gets cool and thicken.

Few Pro tips which you can use while making your own seviyan kheer

The recipe can be easily doubled or tripled in terms of quantity by just increasing the amount of the ingredients.

Use good quality & fresh full-fat Amul milk.

The amount of seviyan can be decreased or increased according to the requirement. If you add more seviyan the consistency will be much thicker like a pudding becomes better. 

You can go for the kheer consistency as per your preference.

Dry fruits can be added whichever you like.
