Cook with Budgett today I was watching to some Chinese movie called , The Chinese Feast a long way back in 1995 produced, just fond never goes away to watch that movie so there the temptation I got of making Chinese Schezwan fried rice that is an amazing recipe/movie too by the way !.

Schezwan Fried Rice is a zesty vegetarian and stir-fried rice variant that showcases a bold and lip snacking homemade schezwan sauce loaded with a fully packed healthy mix of vegetables, aromatics. This famous but easy Indo-Chinese recipe and Cook with Budgett promises that this simply best yet easy-to-make recipe is gonna steal your heart!

Schezwan Fried Rice is a hearty cum satisfying dish that is simply best yet easy to make and can be customized according to your preferences. It’s a very famous Chinese-based recipe that’s been loved around the world and satisfying the craving, and a collab of different ingredients and techniques.

Classic fried rice is homemade in a large pan so that everything gets a great crispy with a slightly crunchy coating and deep smoky flavor coming out of it.

Cook with Budgett schezwan fried rice recipe is completely vegetarian and vegan-friendly and consists of lots of veggies with a homemade Schezwan Sauce. You can enjoy even a gluten-free version if you prepare your schezwan sauce starting from scratch with its GF soy sauce.

The tasty schezwan sauce is a lethal combination with spicy and tangy flavors from dry chili peppers to garlic and vinegar.

How to make Schezwan Fried Rice

Starting with Cooking up of Rice

1. Rinse 2 cups of basmati rice or long-grained rice whatever is suitable you feel, until the water runs clear all the starch present in the rice. Then soak up the rice in water covering the rice grains up to 1 to 2 inches for 30 to 35 minutes. Then drain all the water and set it aside.

2. Bring 4 cups water, half teaspoon salt, and a Quarter teaspoon oil to a gentle boil. Use any of the neutral-tasting oil.

3. Now add the drained soaked rice.

4. Simmer on low-medium heat, until the rice grains are just cooked or till the rice should have a slight bite to them.

5. Strain the rice grains in a mesh strainer. Then rinse them again with water, while gently moving the rice particles with your fingers. Drain it completely.

This method will stop the further cooking of rice grains and removes any excess starch that remained in them.

Cover it up and set it aside at room temperature in order to let the rice grains cool down completely another option to refrigerate while you prep up the veggies and other ingredients.



Prep and Stir Fry Veggies

6. Cut all the french beans with some carrots complimenting with cabbage finely. Carrots and cabbage can also be shredded depend upon personal preference.

Remember to cut the french beans in a fine manner as they take excess time to cook as compared to other veggies.

You can also have the option to blanch the green beans first and then stir-fry it up. Another solid option is to add the beans first while stir-frying it and later on adding the other vegetables.

7. Heat 3 tablespoons oil in a pan AKA wok. Add a Half teaspoon of finely chopped garlic and sauté it up for few seconds.

You can also use toasted sesame oil or any neutral-tasting oil like sunflower oil for stir-frying.

8. Now coming on adding up all the vegetables listed below including one of them is spring onions and celery.

  • Quarter cup finely chopped french beans
  • Half cup finely chopped carrots
  • Half cup finely chopped cabbage
  • Quarter cup finely chopped capsicum (green bell pepper)
  • 2 cup chopped/finely chopped or sliced button mushrooms (or chopped cremini mushrooms)
  • Quarter cup chopped spring onion whites (scallion whites)
  • 2 teaspoon finely chopped celery – optional

9. Increase the heat to medium-high and begin to stir-fry the above veggies. Keep on stirring the veggies frequently, until the lightly browned color is starting to visible from the edges. It took about 10 minutes for the vegetables to cook.

10. Now add 3 tablespoons of the schezwan sauce. You can use Homemade Schezwan Sauce or the other viable option is store brought sauce

Making Schezwan Fried Rice

11. Combine and mix thoroughly all the ingredients which we prepared in the above steps.

12. Now add the rice in portions and gently and smoothly keep on mixing the rice grains with the veggie covered with sauce mixture. Stir those gently as you don’t want to spoil the recipe if the rice grains start to break.

13. Season with salt as needed, Half teaspoon crushed black pepper AKA black pepper powder, and Half teaspoon rice vinegar.

TIP: Swap the rice vinegar with apple cider vinegar, lemon juice or it can be white vinegar.

14. Mix and stir fry for 3 to 4 minutes tossing the rice up so that the sauce coats each bit and every single rice grain very well.

Check the taste by taking some grains at the palm and add more salt with pepper and schezwan sauce if it seems to be needed

15. Garnish with 2 to 3 tablespoons of chopped spring onion and serve the schezwan fried rice sizzling hot.

Schezwan fried rice can be well served alongside any other saucy, spicy foods.

  • Great Smoky Flavor: The mantra to any great stir-fried dish is its smoky flavor that gets achieved by using the right stir-fry tactic. And this can be achieved through continuous stirring up of ingredients as the dish is cooked over a very high amount of heat.
  • Our endpoint goal is to achieve a light brown sear over the rice and over the veggies too but to keep them in motion so much that they don’t get actually burned. Preferably the best to use a carbon steel wok as they retain heat.
  • Prepping up: Make sure to have all of your sauces and seasonings prepared well in advance before getting onto the stir-fry process. You will need to work pro-actively and cautiously and keep your eye constantly over to the wok or the pan if we say while you stir fry, so having everything chopped and mixed get ready to use it and it's incredibly helpful.
  • Schezwan Spicy Sauce: Be ready with tasty homemade schezwan spicy sauce in advance and have it ready to use in your Chinese Schezwan Fried Rice Recipe. If you do not have a sauce prepared then there's no need to worry as you can use a store brought one.
  • Leftovers: Refrigerated cooled leftover of schezwan fried rice can be stored in a sealed container, for up to 1.5 days. Reheat in a microwave or a small saucepot over at the top of the stove. You might feel to add a teaspoon or some water while reheating to get the rice a bit fluffy feature again.
