Dish Name is Flavorful Kadhai Paneer (Cottage Cheese Tasty Recipe). 

As the name itself has its own meaning which derives out of breaking into two words separately one is “Kadai” and the other one is “Paneer”. The word Kadai refers to a famous Indian cookware utensil that is almost a lookalike to Chinese wok but with steeper sides and having more depth in comparison to a wok. Paneer is a fresh cheese made out of curdling milk carried out with the help of lemon juice or vinegar.

Paneer is a firm, non-melting thing and can be easily cut into smaller or larger cubes. Due to its non-melting characteristic and firm texture, it stands out to be an excellent addition to many of the Indian curry recipes.

What is in Kadai Paneer

Three key ingredients that grace up the recipe of kadhai paneer and those are onions, green bell peppers, and tomatoes. Freshly ground spices are considered to be kadhai masala that is also added. At Cook with Budgett simply best yet tasty recipes are always flexible what we meant by this is if you do not have these whole spices, it is perfectly fine.

You can simply go with adding up the ground spices like turmeric, red chili powder with garam masala powder, and coriander powder and your kadhai paneer will taste amazingly good.

About this recipe

This restaurant-style recipe of kadhai paneer is a semi-dry, mildly spiced curry that doesn't harm your throat as well and made out of freshly ground kadhai masala that is sourced out of whole spices.

The flavorful kadhai paneer recipe comes out from freshly pounded coriander seeds and with some Kashmiri red chilies and yes adding freshly ground spices does make a lot of difference to the food that we cook.

How to make your own Flavorful Kadhai Paneer

Making Kadhai Masala

1. In a grinder AKA mortar-pestle, take 2 tablespoons coriander seeds and around  6 to 7 Kashmiri red chilies.

2. Grind till the semi-fine powder comes out to be visible.

3. In a kadhai, heat 4 tablespoons of oil. Add ⅓ to half cup finely chopped onions.

4. Sauté up onions until they turn translucent and soften as well, The flame of the stove must be at medium-low to medium heat to achieve the desired onion texture 

5. Then add 2 teaspoons of ginger-garlic paste.

6. Sauté for a few seconds until the raw aroma of ginger-garlic doesn't bother you or goes away.

7. Now add 3 to 4 cups of finely chopped tomatoes. There's a catch to remember which is, Do not add tomatoes which are very sour.

8. Mix well and sauté tomatoes for 4 to 5 minutes on a medium-low to medium heat

9. Then add the ground kadhai masala with the tomatoes.

10. Mix it all well. Sauté the tomatoes till the whole mixture takes the look which is like a paste and starts to leave oil. This particular method is called ‘bhunao’ in Hindi. The kadhai masala paste will become thick and glossy in look.

Sautéing capsicum

11. Now add 1 to 1.5 cup of capsicum julienne or slices up to you.

12. Sauté the capsicum for some 4 to 5 minutes on medium-low to medium heat.

You can add red or yellow or even green colored capsicum AKA bell pepper. A mix of various colored bell peppers can also be added which will make it more tempting to eat.

13. Then add 2 to 3 green chilies or 2 small serrano pepper (slit) and half a cup of water. You can add less or more water as required.

14. Mix it all very well and sauté until the capsicum is half-cooked. Half-cooked capsicum gives somewhat a crunchy feel to the dish.

15. Once the capsicum is half-cooked then add garam masala powder and salt to taste. Mix all these with the rest of the masala.

Making Flavorful Kadhai Paneer

16. Now add the paneer cubes (300 grams).

17. Again mix it all very well.

18. Lastly add 2 teaspoons crushed Kasuri methi AKA dried fenugreek leaves, ginger julienne (from 2-inch ginger), and 3 tablespoons coriander leaves. Mix again.

If you do not have Kasuri methi or dried fenugreek leaves, then there's nothing to worry about that can be omitted.

Ginger julienne is a must, so do not try to skip it. They infuse a great amount of freshness, zesty flavor to the dish.

19. Serve Kadhai Paneer, hot or warm the way you like with flatbreads which include roti or naan or plain paratha.

Serving Suggestions

  • This semi-dry version of Flavorful Kadhai Paneer tastes outstandingly good with roti or naan or paratha. You can also have it with dinner rolls. Serve it alongside onion rings and lemon wedges.
  • More innovative ideas if we explore then it would be to make grilled sandwiches or toasties with Flavorful Kadhai Paneer. They taste fantastic. Add some cheese to make them a more jaw-dropping recipe.

Expert Hacks by Cook with Budgett 

  • Kadhai: Don’t have a kadhai? Nothing to worry about. Simply we can use a frying pan or a simple wok.
  • Kadhai Masala: Especially Coriander seeds and dried red chilies used to go in the kadhai masala making it fantastically aromatic and with some pungent touch to it. We can even add a bit of clove with some cinnamon and green cardamom in the kadhai masala.
  • Dry Red Chillies: For the red chilies, use ones which has low to medium heat.  pungent and hot chilies will make the recipe too spicy. If you can get Kashmiri Red Chillies, then add them as they are low in heat and impart a vibrant orange-red color in the recipe.
  • Paneer: It is always better to use Homemade Paneer for any paneer dish that you make. You can even use packaged store-bought paneer. Read the instructions on the package on how to use the paneer. Frozen paneer cubes need to be soaked in hot water before adding them to the dish.
  • Tomatoes: Use tomatoes that are ripped well, red which will give a sweet taste to your recipe. Do not use very much tart or sour tomatoes.
  • Onions: You can use both red onions and white onions as well which are readily available at that time and more convenient to you.
