Cook with Budgett today comes with a recipe of Crispy Vegetable Sandwich is our back to school recipe as our moms used to prepare for us and the time we unlock our Dabba those crispy golden brown color of cheesy vegetable sandwich peeping through aluminum foil that also makes a fantastic, breakfast - quick supper and even quick dinner option. It's delightfully creamy, cheesy, loaded with vegetables, and super -delicious! 

Fun and frolic time at school, May it a pressure at work, everyone's schedule, and mealtimes can feel a bit intimidating at the time when it comes on consuming Crispy Vegetable Sandwich. So this recipe always evergreen when do we eat it

  • Be it lunchtime to weeknight meals, this sandwich is our go-to option since my kids love it!! And it's very easy to make too.


Temptation Is Irresistible, Believe Cook with Budgett



Four bread slices (brown/white bread)

▢Two tsp oil

▢Half onion (finely chopped)

▢Half cup Delmonte corn (fresh/frozen)

▢One carrot (finely chopped)

▢Half capsicum (finely chopped)

▢One bunch spinach/palak leaves (chopped)

▢One tsp crushed pepper

▢Half tsp mixed herbs (optional)

▢Add salt to taste

▢Two tbsp Kissan tomato sauce

▢Two tbsp green chutney

▢Quater cup Amul mozzarella or Amul cheddar cheese (grated)


The filling which we will make from the above ingredients spread it over your favorite bread, and toast or grill it. This won't be easier than that to get a wonderful recipe. 

The veggies are major ingredients to this recipe and provide a subtle crunch to the recipe. 


INSTRUCTIONS

  •  First, in a large kadhai heat up the oil and shallow fry the onions.
  • With that add corn, carrot with a bunch of capsicum. Shallow fry for a minute till the veggies are half cooked yet the crunchiness starts reflecting.
  • Now add chopped spinach and shallow fry till they shrink from their original size.
  • Add pepper, mixed herbs, and salt. give a good mix.
  • Now pick 2 pieces of bread and on one of its sides spread tomato sauce and green chutney on the other.
  • Also, place the prepared stuffing with the ingredients mentioned above and spread uniformly on the bread slices.
  • This part is the most loved one even while doing it, which is for grating of the cheese over the stuffing.
  • Cover now with the other slice of bread and grill or toast on Tawa.
  • Furthermore, close the griller and grill till the cheese melts and the bread turn golden brown.
  • Now bisect the bread into two halves and serve.
  • Finally, serve hot or the surprise can be packed for kids lunch box, your hubby's and to whom you wanna share the happiness.
