These vegan vegetable cutlets are basically pan-fried to keep it healthy and fully nourished, but as you prefer you can shallow it fry. While there are many words to quote what a cutlet is, but let's stick to the Indian and our version of the cutlet. BUDGETT - Chatpate Matar Kulcha Banane ke Liye 

  




Recipe Requisite

▢ 240 gms white dried peas 


Making of Paste or Puree 

▢ Ek teaspoon cumin seeds

▢ Ek teaspoon fennel seeds

▢ Ek teaspoon whole black peppercorns

▢ ½ inch stick cinnamon

▢ Ek black cardamom

▢ 2 green chillies

▢ ¼ cup mint leaves


To Make Matar

▢¼ teaspoon turmeric powder

▢1 teaspoon coarsely ground coriander

▢1 teaspoon red chilli powder

▢1 teaspoon chaat masala

▢1 teaspoon cumin powder

1) Start off with washing the white peas (ohh ji apne safed matar ji) and soak them under the water for approximately 4-5 hours.


2) After they are well soaked, discard the water using a mesh strainer(Jaali wali Chaani).


3)Add those peas to a pressure cooker and add salt and water to it. Let them away from your eyes for 3 whistles in the pressure cooker and then allow the cooker to cool naturally.


4)After the cooker heat gets cooled down, then take the peas out in a bowl.



Instructions For Making the Masala Paste

Now in the grinder add 1 teaspoon cumin seeds, 1 teaspoon fennel seeds, 1 teaspoon whole black peppercorns, ½ inch cinnamon stick, 1 black cardamom, 2 green chillies and ¼ cup of mint leaves. Grind them till the last you see the yellowish color paste come out of it


Instructions For Making the Matar


1) Heat up the pan and add 2 tablespoons of vegetable oil in it. Now, go with adding up of 1 teaspoon of the tempting ginger-garlic paste and ¼ tablespoon of turmeric powder in the pan.

2) Put the MDH CHANA MASALA and then add boiled white peas in the pan.

3) Stir all the ingredients well.(Aache se milaye)

4) Now, add the paste which we made in above with the white peas and mix well.

5) After mixing the ingredients well add 1/4 cup of tamarind water and salt to taste in the pan. Mix all the ingredients in the pan well and then after a while add about a cup of water in it. Allow the ingredients to cook for 7-8 minutes.

6)After 8 minutes, turn off the heat and serve the Matar in a bowl and enjoy this lip snacking dish
